A Mix of Cultures
So, when Authentic Tex-Mex is written on the Mexican Inn Café menu? You know they are one of the few restaurants still serving that can make that claim. Tex-Mex has its roots in Texas. Mexican Inn Café was here as the cuisine developed and defined itself!
The United States is and always has been a blend of cultures and culinary traditions. As settlers moved west, they brought their influence and became influenced by others they met.
Long before Texas became our 28th state in 1845, cattle ranchers to the north and Mexicans, south along the Rio Grande, shared the land and influenced each other. A fusion of traditional northern Mexican foods and the staples used by early settlers and cattle ranchers developed. Over time, the unique blend of ingredients became significant enough to be considered its own cuisine. It was easily and aptly named Tex-Mex. Tex-Mex in Fort Worth – about as authentic as you can get!
What’s the Difference?
Several ingredients specifically characterize Tex-Mex cuisine. These are just a few foods that were not being used in Mexico in the 1940s and earlier but were being used heavily to the north.
Like ground beef for instance. Cattle arrived in North America hundreds of years earlier, but they were encouraged and flourished in the US.
Also, yellow cheese was not found in true Mexican dishes. White cheese yes, yellow, no. You’d see Mexican Crema, similar to sour cream, and queso fresca which is a Mexican soft white cheese. Tex-Mex which focuses on yellow cheeses.
White flour was not common in Mexico but is a part of Tex-Mex cuisine. Instead, maize, otherwise known as corn, provided meal and flour for cooking.

Tortilla chips hadn’t even been an idea until 1940 when clever Californians first cut up and deep-fried tortillas! So, you’d be safe calling nachos Tex-Mex – and Delicious!!

A great combination of ground beef and refried beans to start. These are topped with melted cheddar and Monterey jack cheeses. And the cold toppings include fresh pico de gallo, guacamole, and sour cream. Jalapenos are sprinkled on top for a little spicey heat!
