The notion of what we now call fajitas came out of the need to be able to turn the lowest cuts of beef -being offered as wages, into something palatable. Like today, marinades were used to tenderize tougher beef cuts. Then the beef was likely cooked over a fire in some fashion and slipped into a tortilla for easy handling.

There were no sides. Just meat and tortillas. We’ve come a long way!

Tortilla recipes today usually have added fat (lard, shortening, or olive oil), salt, and sometimes baking powder. They were a good idea then and they remain delicious and a great idea now!

Fajitas evolved and grew in popularity throughout the 60s and 70s. Sizzling vegetables were added, the meat was upgraded. The number of sides grew! Then the 90s saw influencers in the restaurant scene begin serving fajitas. The rest is history.
